Good Morning, Moms! Hope you all had a wonderful weekend!
It’s week 3 of the Lunchbox Chronicles … what my boys ate for lunch last week.
Please remember the caveat … 0630 in the morning, rushing, crappy lighting, yada yada yada … 😉
Monday
We went to our favorite Mexican restaurant for lunch after church on Sunday, so my boys took leftover black bean burritos and rice in their thermos. Mandarin oranges and tortillas chips rounded out the bulk of their meal. My youngest chose a Hershey bar as a treat, my oldest a homemade Rocky Road cookie. Milk to drink.
Tuesday
A family favorite – greek pitas. I kept the meat warm in a thermos, whole-wheat pitas and tomatoes, plus cucumber and a non-fat yogurt-based sauce for my youngest. Mixed fruit, milk, and juice for my oldest.
Wednesday
Homemade pizza (crust is Mama Mary’s, my favorite). Toppings include sauce, pineapple, olives and mozzarella cheese. I usually add red pepper but was out. Strawberries, blueberries, carrots and the addition of cucumber for my youngest. My youngest also likes Ranch for dipping, so he has a small side of that. Milk to drink.
Thursday
Leftover Chicken Cacciatore – breaded chicken (I use Applegate), diced tomatoes, green pepper, garlic, onion, noodles kept warm in a thermos with a side of sliced peaches and crescent rolls. Both boys chose milk to drink.
Friday
Leftover day! I despise throwing food out so the boys chose their lunch from the two meals we had a little left of. My oldest chose the chicken cacciatore with mixed fruit, a crescent roll, and milk. My youngest decided on greek pitas with meat, tomatoes, cucumber, the non-fat yogurt sauce with mixed fruit and milk.
